Grilled Red Snapper with Garlic Tartar Sauce

Servings = 2 | Serving size =4 ounces fish

This recipe can be multiplied by 2, 3, 4, 5.

This recipe also requires making Garlic Tartar Sauce

The leftovers make great sandwiches.

Serve with Potato Vinaigrette Salad or Roasted Potatoes or Purple Potato Salad

AND

Serve with Roasted Eggplant Salad or Herbed Zucchini or Roasted Tomatoes

2 4 ounce filets red snapper
1/8 tsp salt
fresh ground black pepper
spray grapeseed or olive oil
2 Tbsp Garlic Tartar Sauce

Heat the grill to hot or place a large grill pan in the oven at 375°F.

While the grill (or oven) is heating rinse the snapper filets and pat dry. Place on a cutting board skin side up and score the skin about 1/2 inch apart. Do not cut more than just through the skin.

Lightly sprinkle the salt and pepper over the scored fish.

When the grill (or oven) is hot spray the grill (or grill pan) lightly with oil. Place the fish on the grill skin side down and cook for about 5 minutes. Turn and cook for another 2 - 3.

Serve over Purple Potato Salad and top with 1 tablespoon of tartar sauce per serving.
