I had Sambal in Singapore and it was amazing. It works with so many dishes and these roasted carrots are a great example. You can use almost any firm veggie that you like, including parsnips, cauliflower, or even Brussels sprouts.

Cooking Time: 30 Minutes
This recipe can be easily multiplied. Roasted carrots keep well, refrigerated, for about a week. They're great hot or cold. Try them on sandwiches!
This recipe also requires making Sambal.
Place a large roasting pan in the oven and preheat to 325°F.
When the oven is hot, add the sesame oil and then the carrots.
Roast for about 20 minutes. Toss occasionally.
Add the Sambal and toss well to coat the carrots.
Roast for another 5 minutes and serve.
