Cooking Techniques

Dice

To cut food into small regular sized cubes about 1/8 to 1/4 inch on each side. An ingredient like pineapple is first sliced lengthwise and then the slices are cut into long square strips. These are lined up and cut into cubes. For a good instruction on dicing onions see Dicing onions.
