The refrigerator light goes on...

I love Caesar Salad and there are a lot of variations on the classic dressing. There are no less than three variations already on the Dr. Gourmet website: Classic Caesar, South of the Border Caesar, and White Bean Caesar. Why do another?

This recipe slightly tweaks what I think is a very good version but the roasted garlic brings a much more mellow flavor to the dressing. The difference is subtle unless you taste them side by side. I think that this version is not necessarily better, just mellower.

Roasted garlic makes a great foundation for salad dressings and sauces. It is always worth having some on hand for that but you can also use individual cloves tossed into a pasta sauce or salad at the last minute to add a rich umami flavor to the dish without overpowering the other ingredients.


 

Roasted Garlic Caesar Salad Dressing

Servings: 6 | Serving size: about 1 Tablespoon

Cooking time: 15 minutes

This recipe can easily be multiplied by 2 and keeps well, tightly sealed in the refrigerator, for about 5 - 7 days.

This recipe requires that you make Roasted Garlic first.

1 bulb roasted garlic
2 tsp. Worcestershire sauce
1/4 tsp. fresh ground black pepper
2 Tbsp. fresh lemon juice
1 Tbsp. Dijon mustard
1 tsp.. honey
1 1/2 oz. Parmigiano-Reggiano (grated)
1/2 cup Greek yogurt

Roasted Garlic Caesar Salad Dressing recipe from Dr. Gourmet

Place the roasted garlic, Worcestershire sauce, pepper, lemon juice, mustard, honey, parmesan cheese and yogurt in a blender and process until smooth.

Chill for at least 2 hours.
