This is a light and wonderful salad that is full of flavor. I like the seeds left in the peeled cucumbers. The wonderful textures of the cucumbers and tomatoes combined with the creamy dressing makes this a perfect side dish for your summer cookout.

2 medium | cucumbers (peeled and cut into large dice) |
1 small | tomato (cut into large dice) |
1 small | shallot (minced) |
1/4 tsp | salt |
fresh ground black pepper (to taste) | |
2 Tbsp | fresh chives (minced) |
2 Tbsp | reduced-fat sour cream |
Mix all ingredients together and chill before serving.
