The refrigerator light goes on...

Apples and pork are made for each other. Pork has a sweeter savory flavor and this compote with its sweet apple and honey flavors combine well with the spiciness of the paprika and cumin. You can make the compote well in advance and reheat it with a little water in the pan.


 

Pork Chops with Savory Apple Compote

Servings: 4 | Serving size: 4 ounces pork with compote

Cooking Time: 30 Minutes

This recipe can be multiplied by 2, 3, 4, 5, 6, 7, 8.

Leftovers are good - leftover pork chops make great sandwiches and the compote can be served warm or cold.

Serve with Mashed Yams or Baked Sweet Potato

Serve with Parmesan Squash. or Pan Grilled Broccoli or Pan Grilled Asparagus or Parmesan Zucchini

2 tsp olive oil (divided)
1 small shallot (minced)
1 medium rib celery (small dice)
1 apple (peeled and cut into medium dice)
1/4 cup white wine
1/2 cup water
3/4 tsp salt (divided)
fresh ground black pepper (to taste)
1 tsp paprika
1/4 tsp ground cumin
1/8 tsp ground cinnamon
1 tsp maple syrup
4 4 ounce boneless center cut pork chops

Place a large saucepan in the oven and heat the oven to 375F.

Place 1 teaspoon olive oil in a medium sauce pan over medium heat. Add the shallot and sauté for about 2 minutes.

Add the celery and continue sautéing for another two minutes, then add the apple and continue sautéing for another two minutes.

Add the water, wine, salt, pepper, paprika, cumin, cinnamon and maple syrup and stir.

Simmer 20 minutes.

While simmering, place 1 teaspoon of olive oil in the pan in the oven. Add the pork chops, sprinkle 1/8 teaspoon salt over the pork chops, and return the pan to the oven.

Cook for 8 minutes, then turn the chops over and cook for another 7 minutes or until the center reaches 140 degrees. Serve topped with the compote.
