The sweetness of the mango goes perfectly with the mustard and the brightness of the lime and green onions. This salsa goes great on almost anything: grilled fish or shrimp, roasted chicken or even on top of your tacos.

 
 

Mango Mustard Salsa

Servings: 4 | Serving size: 1/4 cup salsa

Cooking time: 30 minutes (does not include chilling time)

This recipe can easily be multiplied and makes great leftovers.

1 mango (peeled and cut into small dice)
2 small green onions (thinly sliced crosswise)
1/2 small red bell pepper (seeded and finely diced)
3 tsp. coarse ground mustard
1/8 tsp salt
1 tsp olive oil
1/2 lime (juiced)

Place the mango, green onions, red peppers, mustard, salt, olive oil, and lime juice in a mixing bowl.

Fold together and chill well before serving.
