The refrigerator light goes on...

There are a lot of dry rubs on the market very similar to this jerk. There's essentially nothing in them but flavor so you can use almost as much as your spicy palate will allow. Many do have more salt in them than this recipe so check the Nutritional Facts carefully. If you can not find dried chipotle peppers, use 2 teaspoons of dried chipotle powder.


 

Jerk Rub

Servings: 24 | Serving size: 1 teaspoon (makes 1/2 cup)

Cooking Time: 15 Minutes

Keeps very well for months sealed tightly.

1 small dried chipotle
1 Tbsp black peppercorns
1 Tbsp onion powder
2 tsp allspice
2 tsp cinnamon
1/2 tsp ground cumin
1 Tbsp coriander seeds
1 Tbsp garlic powder
1 Tbsp ground ginger
1 Tbsp thyme
1/2 tsp ground nutmeg
1 Tbsp light brown sugar
1/2 tsp whole cloves
1 tsp salt

Combine all ingredients in a blender and blend on high speed until all ingredients are powdered.
