There are a lot of dry rubs on the market very similar to this jerk. There's essentially nothing in them but flavor so you can use almost as much as your spicy palate will allow. Many do have more salt in them than this recipe so check the Nutritional Facts carefully. If you can not find dried chipotle peppers, use 2 teaspoons of dried chipotle powder.

1 small | dried chipotle |
1 Tbsp | black peppercorns |
1 Tbsp | onion powder |
2 tsp | allspice |
2 tsp | cinnamon |
1/2 tsp | ground cumin |
1 Tbsp | coriander seeds |
1 Tbsp | garlic powder |
1 Tbsp | ground ginger |
1 Tbsp | thyme |
1/2 tsp | ground nutmeg |
1 Tbsp | light brown sugar |
1/2 tsp | whole cloves |
1 tsp | salt |
Combine all ingredients in a blender and blend on high speed until all ingredients are powdered.
