"The combination of olive oil, garlic and lemon juice lifts the spirits in winter." -Yotam Ottolenghi

The refrigerator light goes on...

Simple recipes are always the best in my opinion. A few ingredients in the correct amounts makes every bit of sense: you can taste each but the sum is greater than the parts. Sauces like this one are just that, simple but amazingly delicious.

The slight bitterness and astringent flavor of the cilantro blends perfectly with the sharp, savory fresh garlic. This is balanced by the tart yogurt and lime and rounded out with the sweetness of just a touch of honey. This is the type of recipe where you want to use the best extra virgin olive oil you can afford. The fruitiness really comes through.

Best of all this is amazingly versatile. You can serve this on almost any seafood, chicken, or pork. Use the leftovers on your sandwiches with cheese and tomatoes, or better yet, hard-boiled egg, cucumber, and sprouts.
