Cucumber White Bean Salad

This is a great summer side salad for grilled fish, chicken or steak. It has everything you would want: it's both a healthy starch and a vegetable side dish. Serve this topped with a simple grilled piece of salmon that has been chilled for the perfect hot weather meal.

Here's the recipe for Cucumber White Bean Salad without the pictures (and here's the Low Sodium Cucumber White Bean Salad recipe). You can print the recipe by clicking the print icon at the top of the right-hand column. Be sure to turn off any popup blockers, as it opens in a new window.

Step One: Assemble your ingredients.

Ingredients for Cilantro Lime Dressing

From top, spiraling clockwise: white beans, tomatoes, green onion, cucumber, lemon, mint leaves, olive oil, yellow bell pepper, capers, yogurt.

Step Two: Prep the ingredients.

Dice the Cucumber

First, slice the ends off the cucumber and discard.

Slice the ends off the cucumber

Slice the cucumber in half lengthwise. Use a small paring knife for more control since most cucumbers are slightly curved and it is best to follow the contour of the arc.

Slice the cucumber in half lengthwise

Depending on the thickness of the cucumber and how fine a dice you want, cut at least two or three more lengthwise slices from each half of the cucumber.

Cut additional lengthwise slices
