This is a great summer side salad for grilled fish, chicken or steak. It has everything you would want: it's both a healthy starch and a vegetable side dish. Serve this topped with a simple grilled piece of salmon that has been chilled for the perfect hot weather meal.

From top, spiraling clockwise: white beans, tomatoes, green onion, cucumber, lemon, mint leaves, olive oil, yellow bell pepper, capers, yogurt.
Dice the Cucumber
First, slice the ends off the cucumber and discard.
Slice the cucumber in half lengthwise. Use a small paring knife for more control since most cucumbers are slightly curved and it is best to follow the contour of the arc.
Depending on the thickness of the cucumber and how fine a dice you want, cut at least two or three more lengthwise slices from each half of the cucumber.
