Enhancing Flavors
My Orange French Toast recipe is a good example of using enhancing flavors.
Many traditional recipes like French toast are lower in calories but
have a high amount of fat and cholesterol. Cutting fat out of recipes is easy
because most simply have more than they need. The extra fat doesn’t really
add flavor or even very much in the way of richness.
In a recipe such as this one, the orange acts as a flavor enhancer, making
it easier to reduce the amount of fat. While there’s only a slight reduction
in total calories, the final recipe has much less fat but a richer, more
complex flavor.
