The refrigerator light goes on...

Tomato soup is one of my favorites. This version using a few sun-dried tomatoes makes it even more savory and satisfying. You do have to be careful with sun-dried tomatoes - if you use too many your recipe will become bitter.


 

Sun Dried Tomato Soup



Servings = 2 | Serving size = 2 cups soup

Cooking Time: 60 minutes

This recipe can easily be multiplied and makes very good leftovers.

1 tsp. olive oil
1 large onion (diced)
1/2 cup sun-dried tomatoes
1 15 ounce can no salt added diced tomatoes
1/8 tsp. salt
1 cup water
1 cup no salt added vegetable stock
2 ounces goat cheese

Sun-Dried Tomato Soup Recipe from Dr. Gourmet

Place the olive oil in a medium saucepan over medium heat.

Add the onion and cook for about 5 minutes. Stir frequently.

Add the sun-dried tomatoes, canned tomatoes, salt, water, and vegetable stock.

Stir, cover, and simmer for 40 minutes.

Remove from the heat, let cool slightly and puree using a blender or stick blender.

Add the goat cheese and blend until the cheese is melted and the soup is smooth. Serve.
