"Food eaten quickly isn't food." -Aleksandr Solzhenitsyn

The refrigerator light goes on...

When I eat at really great Mexican restaurants and have really great mole I would love to share those flavors. A truly great mole takes all day to make (in my opinion) and has great chicken and chocolate and spice. Rich and creamy - but it takes time.

This is a good compromise. Cooking the chicken thighs on high heat releases a lot of savory chicken flavor, and simmering that with the coffee (coffee works better for the quick recipe I think) and other spices releases all of the savory and spicy flavors. The baker's chocolate thickens the soup and rounds out the flavors.

Baking Chocolate

If chocolate liquor is not dried and ground into cocoa powder, it is refined further by replacing some of the cocoa butter with lecithin (and other ingredients depending on the manufacturer) to create a smooth velvety chocolate. This unsweetened chocolate is what we know as baker's chocolate. It is also called bitter chocolate and is the base for most of the chocolate sweets created today. Baking Chocolate »
