The refrigerator light goes on...

I had a version of this dressing as part of a delivered meal that we were reviewing. I thought that the basics of it were great, but the dressing was much too salty. The tahini makes a perfect base for your vinaigrette, but it's also a great ingredient to keep on hand for making your own hummus. You can also use tahini in a lot of recipes that might call for peanut butter to bring a different nutty flavor to the dish.


 

Lemon Tahini Dressing

Servings: 4 | Serving size: 3 tablespoons dressing

Cooking Time: 15 minutes

This recipe can easily be multiplied and makes good leftovers.

4 tsp. tahini
1 tsp. sesame oil
4 Tbsp. Greek yogurt
4 Tbsp. water
1 lemon (juiced)
1/8 tsp. salt
1 tsp. honey

several fresh lemons

Place the tahini, sesame oil, yogurt, water, lemon juice, salt, honey and pepper in a bowl and whisk until smooth.

Chill well before serving.
