This recipe serves 6 and with 2 ounces whole wheat pasta and 3 tablespoons of cheese per serving itís only about 75 cents each. Thatís it. The ingredients for a meal that serves six cost about 5 dollars. Healthy, easy, delicious and smart.

Al Dente

An Italian phrase whose literal translation means "to the tooth." A food is said to be cooked al dente when there is a slight resistance when it is bitten. The term is used for any food, not just pasta. Lightly blanched asparagus, for example, is said to be cooked al dente.


 

Quick and Easy Tomato Sauce and Pasta



Servings = 6 | Serving size =3/4 cup sauce with 2 ounces pasta and 1/2 ounce cheese

Cooking Time = 30 Minutes

This recipe can be multiplied by 2, 3.

This recipe makes great leftovers.

1 Tbsp olive oil
3 cloves garlic (sliced)
1 large onion (diced)
1 1/2 lbs Roma tomatoes (quartered)
2 cups water
1/2 tsp salt
fresh ground black pepper (to taste)
1 Tbsp dried basil
1 tsp dried oregano
4 quarts water
12 ounces whole wheat or gluten-free pasta
3 ounces parmesan cheese (grated)

Place the olive oil in a large skillet over medium-high heat. Add the garlic and onions. Cook for about 5 minutes, stirring frequently.

Add the tomatoes and cook for about 5 minutes, stirring frequently.

Add the water, salt, pepper, basil and oregano.

Reduce the heat to medium so that the sauce is simmering. Cook for about 15 Ė 20 minutes, stirring occasionally.

While the sauce is cooking place the water on to boil. After it is at a full boil add the pasta and cook, stirring occasionally, until al dente. Drain and then top with about 3/4 cup sauce and 1/2 ounce cheese.
