The great thing about these oven fried yams is that they are crispy and delicious with just a bit of salt and thyme flavor. This recipe is so simple you just have to do it.
The prep takes all of two minutes. Tossing them into a pan and watching them - another two minutes. Great fries to go with that Turkey Mushroom Burger in thirty minutes total. Easy and great for you with a point on your Mediterranean diet score as well as 6 grams of fiber.

Cooking Time: 30 Minutes
This recipe can easily be multiplied but does not make very good leftovers.
Scrub the yams well and then cut into wedges. It's easiest to cut them in half lengthwise and then quarters and then eighths.
Place the cut yams in the ice water for 20 minutes
Place a large skillet in the oven and set the preheat to 325°F.
When the oven is hot spray the pan lightly with oil.
Remove the yams from the ice water and pat dry.
Add the yam wedges to the hot pan and sprinkle the salt, pepper and thyme over the top.
Spray lightly with olive oil.
Return the pan to the oven and cook for about 25 minutes tossing frequently.
Serve hot.
