This is a great all purpose sauce for your Southwestern or Mexican dishes. The smoky sweet flavor goes great on tacos, enchiladas, quesadillas or even taco salad.


 

Tomatillo Pasilla

Servings: 8 | Serving size: about 1/4 cup

Cooking Time: 60 Minutes

This recipe can be multiplied by 2, 3, 4, 5, 6, 7, 8.

This recipe will keep for about 3 days in the refrigerator.

1 lb tomatillos (husked)
1 chipotle in adobo
1 clove garlic (coarsely chopped)
1 1/2 cup water
1/2 tsp salt
fresh ground black pepper (to taste)
1/4 cup cilantro

Place all ingredients into a 4-quart saucepan and bring to a boil, then reduce heat to simmer.

Simmer uncovered for 25 minutes, stirring occasionally.

Allow to cool, then add the cilantro and stir.

Using a hand (immersion) blender or a regular blender or food processor, puree until smooth.

Chill for at least an hour before serving.
