This is a fantastic way to have cauliflower. The light coconut milk makes it rich and creamy but at the same time lactose free. This is a great way to get your kids to eat their veggies.


 

Creamy Cauliflower

Servings: 2 | Serving size: about 1 1/2 cups

Cooking Time: 45 Minutes

This recipe can be multiplied by 2, 3.

This recipe keeps well for a about 2 days in the refrigerator.

2 cups water
1 small head cauliflower
1/4 cup reduced-fat (lite) unsweetened coconut milk
1/4 tsp salt
fresh ground black pepper

Place the water in a medium stock pot fitted with a steamer basket over high heat.

Place the cauliflower in the steamer basket and steam for about 20 - 25 minutes until soft.

Using a blender or a stick blender puree until smooth. Add the light coconut milk and salt and pureé. Reheat gently and serve.
