Ask Dr. Gourmet

I am on Coumadin 5 mg daily. I get a pt blood test every two weeks. When the doctor gets the report quite often he has me to double up on my medication for one night. I eat a lot of salads minus the lettuce. Normally I put tomatoes, celery, green, yellow and red peppers and salad dressing. My question is, do any of these items or a combination have large amounts of vitamin K? Thank you.

Dr. Gourmet Says...

Most veggies have lower amounts of Vitamin K - under 20 micrograms (mcg) per serving. By themselves this may not be a lot of Vitamin K and might not affect your INR. All of them added up might, however.

You can find out the nutritional content of any ingredient by using the USDA database (at https://ndb.nal.usda.gov/ndb/search/). Add the amount of Vitamin K (under Full Report under Vitamins) in each ingredient in your salad and you will find out how much Vitamin K is in your salad or any other meal.
