What kind of knife should I use to butterfly meats?

What size chef's knife is right for butterfly cuts? Specifically chicken breasts and hangar steak.

My personal preference is to use a boning knife rather than a chef's knife.

The shape of the point and the thinner, tapered blade make control a lot easier.
